The main components of edible packaging or film are film-forming material, plasticizer, and additives. To prepare a film-forming dispersion (FFD), edible films require an adequate solvent; for this purpose, water and alcohol or aqueous alcohol are used. Primary film-forming materials include proteins, polysaccharides, lipids, and combinations or mixtures of these. Plasticizers and other functional additives such as antioxidants, vitamins, antimicrobial agents, essential oils, pigments, and chemical preservatives are also used to improve the protective properties of edible film or packaging.

To avoid packaging failure, edible packaging is tested using a variety of measurable quality parameters. The moisture and gas barrier properties, microbiological stability, moisture adsorption capacity, adhesion, cohesion, solubility, transparency, mechanical properties, and sensory and organoleptic properties are all evaluated. Typically, edible packaging material has no effect on the appearance, smell, or taste of the packaged product. However, recent advancements have allowed the product to add aroma volatiles, vitamins, and flavouring agents to the packed items.

The global Edible Packaging Market is estimated to be valued at US$ 1,004.8 million in 2021 and is expected to exhibit a CAGR of 6.9% over the forecast period (2021-2028).

Polysaccharides are also widely used in edible packaging because they act as a significant barrier to oxygen and carbon dioxide at low and moderate humidity. Chitin, starch, cellulose, gum, and other polysaccharides are the most common sources of polysaccharides. Polysaccharide demand is expected to rise in the coming years as the global market develops. These polymers are composed of materials that are safe for human consumption, such as lipids, polysaccharides, proteins, composites, and surfactants. Although regulatory requirements for edible packaging are high in some regions, such as Europe, and the high costs of manufacturing edible polymers, the edible packaging market is expected to grow.

The global edible packaging market is segmented into North America, Europe, Asia-Pacific, and LAMEA. Various countries in each region are studied and analysed in order to identify the major trends demonstrated by these regions. In 2016, Europe dominated the global edible packaging market, followed by North America.
